Ceylon cinnamon is the best cinnamon, it also sometimes known as ‘true cinnamon,’ has a subtle warm wood scent with calm fruity overtones. A little evergreen tree endemic to Sri Lanka produces Ceylon cinnamon. Poached spicy fruits, Sri Lankan curries, fragrant rice, and braised pork shoulder go well with Ceylon cinnamon sticks. Cinnamon sticks can be brewed to improve the flavor of tea, coffee, chocolate, or even plain water. Ceylon cinnamon is a milder alternative to cassia cinnamon.
