Kithul Treacle also known Kithul syrup, or Kithul peni locally. It has woody, flowery, smokey, and even savory overtones in its purest form, and is commonly utilized in Sri Lankan cuisine. It’s also cooked down and poured into molds, usually made of empty coconut shells, to form hakuru, or jaggery, a partially refined palm sugar that’s used all throughout the island.
